Grilled Hawaiian Aku Served With Papaya

Ingredients

  • - 4 Aku Medallion ' 6 oz each
  • - 2 tsp chopped basil
  • - 1/2 cup olive oil
  • - Salt and pepper to taste
  • - 1 Papaya (peeled and seeded)
  • - 1/2 cup black beans (cooked)
  • - 4 Tsp Minced Ginger
  • - 4 Tsp Fresh Basil (Sliced into Julienne strips)
  • - 2 Tsp Sweet Sake
  • - 2 Tsp Rice Vinegar
  • - 1 Lime (Squeezed for Juice)
  • - Radicchio leaves and radish sprouts (for garnish)


Combine Aku medallions, basil, olive oil, salt and pepper and marinate for 15 to 30 minutes before grilling. Cut papaya into small cubes and in a medium mixing bowl combine with black beans. Add all the remaining ingredients; mix well. Let flavors combine at least 15 minutes before serving. Grill Aku until it flakes easily with a fork. Cook Aku to medium rare or medium. Serve with Papaya Black bean relish in radicchio leaves. Garnish as desired. Makes 2 servings. * Alternate fish: Ahi, Tombo, Hebi, Shutome, Opah, Monchong.
