Onaga (Long Tail Red Snapper)
Also known as the Onaga, this fish wins the most beautiful Snapper award. These fish are Revlon red with silver white sides, big black eyes and a long swallow-like tail. Onaga live in depths ranging from 700 to 900 feet and are a prize catch. Onaga are caught exclusively by hook and line methods and are Hawaii's second most abundant bottom fish in terms of total catch and value. Onaga fillets are a clear light pinkish flesh similar to the Opakapaka but somewhat softer. It can be prepared in a variety of ways including sashimi style.
