Opakapaka (Pink Snapper)
These snappers can be caught year round in Hawaiian waters although winter is considered the peak season. In modern times Opakapaka has been the most abundant Hawaiian bottom fish in terms of landed weight and total catch value. Caught in depths of 300 to 500 feet of water, Opakapaka are moist, delicate fish with white fillets that melt in your mouth when saut'ed, baked, steamed, or broiled. Their size ranges from 4 to 14 pounds. They are caught exclusively by hook and line methods and are considered to be some of the most difficult fish to catch..
