Yellowfin Tuna
Yellowfin is caught by a variety of methods year round in Hawaiian waters. Hand line boats and trollers contribute the majority of Yellowfin each year. Yellowfin is considered to be interchangeable with the Blue Fin for Sashimi - although many prefer the higher average fat content of the Big Eye. The quality of Yellow Fin varies widely with fishing and handling methods. Yellow Fin has a firm texture and mild flavor and is well suited for both Sashimi and a variety of cooking methods.
