Ahi / Tuna |

| Four species of tuna are marketed in large quantities from Hawaii. Three Ahi's (Bigeye, Yellowfin, Albacore) and Aku (Skipjack) are all migratory seasonal fish and are most commonly used for sashimi (raw fish). They can all be cooked in a wide variety of ways. |

Surface Fish |

| Surface and ocean going fish are excellent for sautéing and broiling. A'u is the Hawaiian term for all Billfish and they represent most of the fish in this category. Mahi Mahi, Wahoo, and Opah are also very popular. |

Deep Sea Fish |

| Mainly consisting of members of the Snapper and Grouper families, these are the most popular fish served in Hawaiian restaurants when available. They can be prepared in a variety of ways. |
